Rice pilaf is one of my go-to side dish recipes. It is quick and easy to prepare and is a delicious accompaniment to any weeknight meal. I especially like to pair it with protein and vegetable sheet pan meals.
Basmati Rice Pilaf

A quick and easy side dish that goes well with vegetables, chicken, pork and fish.
Ingredients
- 1 1/2 cups basmati rice
- 3 tsp olive oil
- 1/4 cup finely diced onion
- 1 garlic clove minced
- 2 1/2 cups gluten free, sodium free chicken broth
- 1 tsp sea salt
Directions
- Rinse and soak the rice as per the package instructions.
- In a large frying pan with a lid, on medium high heat, saute the onion until it is fragrant. About 5 minutes.
- Add the garlic and saute for 30 seconds.
- Add the rice and stir until well coated and the oil is absorbed.
- Stir in the the chicken broth and salt.
- Cover the pot and bring it to a boil. Once it is boiling reduce heat to low and let simmer until all the liquid is absorbed. Approximately 10 – 15 minutes.
- After the liquid is absorbed, remove from hear and let sit for 5 minutes.
- Fluff the rice with a fork and serve warm.

- Ensure the rice is rinsed well for best results. Rinsing the rice before cooking removes any extra starch in the rice which can make the rice sticky.
