Potato Salad

A potluck and picnic favourite. The perfect side dish for any barbecue. It’s creamy and satisfying. This recipe is gluten free, dairy free and vegan.

A delicious side dish.

Ingredients

  • 10 medium potatoes, peeled and cut into 1 inch pieces
  • 1/4 tsp salt
  • 3 green onions, sliced
  • 1 cup vegan mayonnaise
  • 1 tsp cider vinegar
  • 1/4 cup green pickle relish
  • Paprika

Directions

  1. Place the peeled and chopped potatoes into a large pot and cover with water. Add the salt and bring to a boil. Boil the potatoes for about 10 minutes until fork tender. Drain the potatoes and place them into a large bowl and let cool completely. About 1 hour.
  2. Once the potatoes have cooled, add the green onions, mayonnaise, relish and cider vinegar.
  3. Toss until everything is coated.
  4. Place the potato mixture in the serving bowl and sprinkle with the paprika.
  5. Chill in the refrigerator until ready to serve.

    Recipe Notes
  • I use vegan mayonnaise in this recipe, however it can be substituted with regular mayonnaise if you aren’t affected by an egg allergy.
  • Green pickle relish is also referred to as hot dog relish.
