A potluck and picnic favourite. The perfect side dish for any barbecue. It’s creamy and satisfying. This recipe is gluten free, dairy free and vegan.
Potato Salad

A delicious side dish.
Ingredients
- 10 medium potatoes, peeled and cut into 1 inch pieces
- 1/4 tsp salt
- 3 green onions, sliced
- 1 cup vegan mayonnaise
- 1 tsp cider vinegar
- 1/4 cup green pickle relish
- Paprika
Directions
- Place the peeled and chopped potatoes into a large pot and cover with water. Add the salt and bring to a boil. Boil the potatoes for about 10 minutes until fork tender. Drain the potatoes and place them into a large bowl and let cool completely. About 1 hour.
- Once the potatoes have cooled, add the green onions, mayonnaise, relish and cider vinegar.
- Toss until everything is coated.
- Place the potato mixture in the serving bowl and sprinkle with the paprika.
- Chill in the refrigerator until ready to serve.
- Recipe Notes
- I use vegan mayonnaise in this recipe, however it can be substituted with regular mayonnaise if you aren’t affected by an egg allergy.
- Green pickle relish is also referred to as hot dog relish.
