Sausage, Peppers and Fennel Sheet Pan Dinner

This sheet pan dinner comes together very quickly. Paired with rice, it’s perfect for a weeknight meal. My Basmati Rice Pilaf goes very well with this recipe.

Sausage, Peppers and Fennel Sheet Pan Dinner

Ingredients

  • 1 large red onion, sliced
  • 3 medium bell peppers, sliced (red, yellow and orange)
  • 2 small bulbs fennel, sliced
  • 4 cloves garlic, minced
  • 1 tbsp olive oil
  • 1/4 tsp black pepper
  • 1/4 tsp sea salt
  • 1 recipe Basmati Rice Pilaf https://yummyglutenfree.ca/2024/01/04/basmati-rice-pilaf/
  • 4 large Italian-style sausages, each sliced in 5 pieces
  • Pecorino cheese, grated
  • red pepper flakes (optional)

Directions

  1. Cover two large rimmed sheet pans with foil and place in the cold oven.
  2. Heat oven to 425F.
  3. In a large bowl, Toss together the onion, peppers, fennel, olive oil, garlic, salt and pepper.
  4. Prepare the Basmati Rice Pilaf.
  5. Once the oven has preheated, remove the sheet pans and divide the vegetables between the two pans.
  6. Nestle the sausage pieces between vegetables, dividing the pieces between the two pans.
  7. Place the pans in the oven and cook for 25 minutes, stirring the pans halfway through cooking, until the sausage is cooked thru.
  8. Remove the pans from the oven. Serve the sausage mixture over the Basmati Rice Pilaf and sprinkle with freshly grated pecorino cheese and hot pepper flakes (if using).

    Recipe Notes
  • Feel free to use one large sheet pan instead of two.
  • Heating the sheet pans in the oven while it is preheating helps to sear the veggies and sausages, giving more flavour to the meal.
  • Be sure to check the ingredients on the sausages to ensure it is gluten free.
