Salmon sushi bowls come together very quickly, making them the perfect choice to enjoy on a weeknight. This recipe brings together classic sushi flavours into a delicious meal. It is a favourite in our house. So yummy!
Salmon Sushi Bowls

Ingredients
- 1 1/2 cups jasmine rice
- 1 1/2 lbs salmon cut into 1 inch cubes
- 2 tsp olive oil
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/2 tsp onion powder
- 3 tbsp mayonnaise
- 1 1/2 tbsp sriracha sauce
- 1 cucumber sliced
- 2 carrots grated
- 2 avocados halved and sliced
- picked ginger
- wasabi
- soya sauce
Directions
- Preheat oven to 400f
- Cook rice according to the directions on the package.
- Meanwhile, place the cubed salmon into a bowl. Coat with with the olive oil.
- Add the salt, pepper and onion powder to the salmon and gently toss, seasoning all of the salmon cubes.
- Place a wire rack on top of a sheet pan.
- Place the seasoned salmon cubes on the wire rack (See picture below).
- Place the salmon into the oven and cook for 9 minutes, until the salmon is cooked through.
- Meanwhile, in a small bowl combine the sriracha sauce and mayonnaise to make a sriracha mayonnaise sauce.
- Slice the cucumbers, grate the carrots and slice the avocado halves.
- Once the rice and salmon are cooked, assemble the salmon sushi bowls.
- Place the rice in the bottom, add the salmon, cucumbers, carrots and avocados.
- Top with some sriracha mayonnaise.
- Serve with pickled ginger, wasabi and soya sauce.
- Recipe Notes
- The salmon can be cooked in an air fryer, however depending on the size of air fryer, the salmon may need to be cooked in batches. The cooking time should be reduced to 6-7 minutes.
- Grating the carrots in a food processor is a great time saver.
- Salmon cooks well on a wire rack sitting on top of a sheet pan as shown in the picture below.
