Apple Walnut Arugula Salad

Living beside an apple orchard has its perks. Fresh and delicious honey crisp apples available every fall to use in all kinds of yummy recipes. This gluten free apple walnut arugula salad is one of my favourite fall recipes. It pairs wonderfully with a bowl of butternut squash soup. Perfect for a yummy fall day!

Apple Walnut Arugula Salad

Ingredients

  • 1/4 cup olive oil
  • 2 tbsp apple cider vinegar
  • 2 tsp honey
  • Salt and pepper to taste
  • 1 5 ounce package baby arugula
  • 1 honey crisp apple cored and thinly sliced
  • 1/4 cup soft goat cheese crumbled
  • 1/3 cup walnuts coarsely chopped

Directions

  1. Whisk together the olive oil, cider vinegar, honey, salt and pepper until well mixed.
  2. Place the arugula on a large platter.
  3. Drizzle the arugula with half the dressing and toss to coat.
  4. Tuck the apple slices into the arugula leaves.
  5. Sprinkle with walnuts.
  6. Drizzle with the rest of the dressing and the top with the goat cheese.
  7. Serve immediately.

    Recipe Notes
  • If honey crisp apples are not available, gala, granny smith or fuji apples will work.
  • I like to serve this on a platter as it makes for a pretty presentation, however you can also make it in a large salad bowl.
  • This salad is best eaten immediately after it is made.
