Pulled pork is perfect for feeding a crowd and super yummy too! This recipe will easily serve a group of 12 – 15 people. The leftovers also freeze well so you can save it to enjoy at another time. I enjoy serving it as pulled pork sandwiches on gluten free buns, however it is also delicious on fries or on nachos.
Pulled Pork - Gluten and Dairy Free

Ingredients
- 4-6 pounds boneless pork shoulder roast
- 1 tbsp garlic powder
- 2 tsp onion powder
- 2 tsp paprika
- 2 tsp salt
- 1 tsp pepper
- 1/4 tsp cayenne pepper
- 1 can Cherry Coke
- 2 cans mild diced green chilies
- 1/3 cup brown sugar
- 1 tablespoon apple cider vinegar
- 2 tsp liquid smoke
- 2 – 3 cups of your favourite gluten free BBQ Sauce
Directions
- Place the pork on a flat surface, such as a plate or cutting board.
- In a small bowl, combine the garlic powder, onion powder, paprika, salt, black pepper and cayenne pepper.
- Rub the seasoning all over the pork.
- In the slow cooker, combine the cherry coke, chiles, brown sugar, cider vinegar and liquid smoke. Stir until the sugar is dissolved.
- Place the pork in the slow cooker. Using a ladle, scoop two ladles of the liquid over the pork.
- Set the slow cooker to low and let cook for 8 – 12 hours.
- Once the pork is cooked, remove it from the slow cooker to a large cutting board. Using two forks shred the meat discarding any extra fat. It should shred very easily. Put the meat as it is shredded into a large bowl.
- Pour two ladles of the slow cooker liquid over the shredded pork and toss well.
- Add 2 cups of bbq sauce over pork and toss until all the meat is coated. Add additional sauce if needed.
- Serve on a gluten free bun with sweet onion, pickles, coleslaw and more bbq sauce.
- Recipe Notes
- If you can’t find Cherry Coke, you can substitute Dr. Pepper. Do NOT use diet or zero sugar.
- I like to use Guy Fieri’s Kansas City Bbq sauce.
