Lentil Vegetable Soup
A hearty and satisfying soup.
Ingredients
- 2 tsp olive oil
- 1 onion, diced
- 1 carrot, diced
- 1 stalk celery, diced
- 1 medium potato, diced
- 1 1/2 tsp cumin
- 3 cloves garlic, minced
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 cup red lentils, rinsed well
- 1 carton no-salt gluten free chicken broth
- 1 tbsp lemon juice
- 1 tsp hot sauce
- 2 tbsp fresh cilantro, chopped
Directions
- In a large pot, heat the olive oil over medium high heat.
- Add onion, carrot, celery and potato and saute for 5 minutes and the vegetables have started to softened.
- Add the cumin, garlic, salt and pepper and cook for about 1 minute, stirring constantly.
- Add the lentils and stir to coat them with the vegetable mixture.
- Add the chicken broth and bring to a low boil.
- Reduce heat to medium-low and let simmer, covered for 25 minutes, stirring occasionally.
- Remove from heat and stir in the lemon juice and hot sauce.
- Serve in bowls topped with the fresh cilantro.
- Recipe Notes
- If you like less spice, omit the hot sauce and/or reduce the pepper to 1/4 tsp.
