Lentil Vegetable Soup

Delicious and healthy, this lentil vegetable soup can made in 45 minutes. The perfect soup to warm you up on a cool day. It has been a favourite in our house for decades. Enjoy!

Lentil Vegetable Soup

A hearty and satisfying soup.

Ingredients

  • 2 tsp olive oil
  • 1 onion, diced
  • 1 carrot, diced
  • 1 stalk celery, diced
  • 1 medium potato, diced
  • 1 1/2 tsp cumin
  • 3 cloves garlic, minced
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 cup red lentils, rinsed well
  • 1 carton no-salt gluten free chicken broth
  • 1 tbsp lemon juice
  • 1 tsp hot sauce
  • 2 tbsp fresh cilantro, chopped

Directions

  1. In a large pot, heat the olive oil over medium high heat.
  2. Add onion, carrot, celery and potato and saute for 5 minutes and the vegetables have started to softened.
  3. Add the cumin, garlic, salt and pepper and cook for about 1 minute, stirring constantly.
  4. Add the lentils and stir to coat them with the vegetable mixture.
  5. Add the chicken broth and bring to a low boil.
  6. Reduce heat to medium-low and let simmer, covered for 25 minutes, stirring occasionally.
  7. Remove from heat and stir in the lemon juice and hot sauce.
  8. Serve in bowls topped with the fresh cilantro.

    Recipe Notes
  • If you like less spice, omit the hot sauce and/or reduce the pepper to 1/4 tsp.
